I’m Helen, the owner and founder of Cottonwood Bakery, specialists in wedding and celebration cakes in Leicester.
I’m inspired by the delicious baked goods I’ve eaten in the neighbourhood bakeries of New York City, the informal but elegant wedding cakes of coastal California, and everything I’ve tasted in between. My aim is to bring these influences back home to make creative and unique cakes and desserts that focus on flavour, quality and innovation. (You won’t find any dull, dry cakes here!) I use only the best seasonal ingredients that I source locally wherever possible.
I have two little boys who are as passionate about cake as I am. They are constantly encouraging me to create new recipes and try out new ideas – as long as there is a bowl or spoon to lick! Hopefully you’ll find some inspiration here for your next party or special occasion.

Bee’s Bakery wedding cakes are hand made to order in Bee’s railway arch in East London. Bee’s cakes have been featured by Vogue, Stylist, Brides magazine, and the Observer’s Top 5. We work closely with venues in and outside of London, and are happy to arrange collection free of charge from our bakery in E7, or can recommend Addison Lee couriers.
I love making really special wedding cakes especially those incorporating a little bit of colour, an interesting texture or just something DIFFERENT from your average cake…and my speciality is cakes decorated with edible flowers
“Having fallen in love with baking and cake decorating, I undertook a four year college course in Royal Icing & advanced cake decorating; gained distinctions in all the qualifications, & my love of cake decorating grew and grew. I have invested a massive amount of time to teach myself as much as possible & I still learn something new every day! In 2012 I embarked on turning my love of creating beautiful cakes into a full time profession as I feel so passionate about the importance of having perfection on your special day. Something too many people still miss out on.
Not having an artistic background hasn’t held me back at all, when I plan a cake and start working on the design elements, I just work from the heart and create what I consider to be beautiful and elegant.”
We believe that a fantastic cake starts with top quality ingredients and we have developed our recipes over time to be the perfect indulgent treat at any celebration. Keri’s striking designs are influenced by her love of all things vintage, rustic and beautiful. Her work incudes handmade sugar flowers, lace, bunting, candy stripes and bows. She also has an artistic background and many designs include hand painting directly onto cakes. From wedding cakes to cupcakes, macaroons to cake pops, Keri will discuss your requirements and ideas with you to design the perfect cake for your occasion. Every order is unique and created individually for you. We look forward to planning the cake for your next big celebration.
